Meal Prep: Breakfast Sandwiches

We make this recipe for bacon, egg and cheese breakfast sandwiches every week. Prep the batch on the weekend, prepare each sandwich the night before, and microwave morning-of for the best texture. Makes six sandwiches.


  • 1 package thick-cut bacon
  • 8 eggs
    For an egg white variation, replace as many yolks as you want with an equal amount of egg whites)
  • 1/4 cup milk
  • 6 sliced ciabatta rolls
    We have tried several kinds of bread and rolls, and have found these hold up the best at all stages
  • 6 slices of sharp cheddar cheese
  • Pam or butter
  • Parchment paper
  • Optional: vegetables like bell pepper, red onion or mushrooms to boost the nutrients and fiber

PREP

  1. Preheat the oven to 375° F. Spray an 8×12 baking dish with Pam. Line a baking sheet with parchment paper.
  2. Scramble eggs and milk. Season with salt and pepper. If including vegetables – chop them small. Leftover vegetables are great for this, as they’ve already had water cooked out: if you’re using fresh veggies, you can include up to 3/4 cup total. Pour the eggs into the baking dish and sprinkle veggies on top.
  3. On the parchment lined baking sheet, fold 2-3 strips of bacon in an N-shape, so they make a squarish shape. Overlap the pieces slightly so they bake together into a perfect piece.
  4. Place both the baking sheet with bacon and the baking dish with eggs into the oven and bake for 20 minutes. Remove the eggs and continue roasting the bacon for an additional 15 minutes or until its done to your liking.
  5. When the eggs first come out of the oven, they will have puffed up. Let them cool and cut them in 6 even pieces. Store in the fridge.
  6. Remove the bacon from the baking sheet and dry on paper towels. Store in the fridge.
  7. Bask in your goodness: future you will thank you!

ASSEMBLE

  1. The night before, on a 12×12 piece of parchment paper, split the ciabatta roll.
  2. Place cheese, egg, ketchup if you’re using it, bacon, and the top bun. This order keeps the items with more moisture away from the bread so it avoids sogginess.
  3. Wrap in parchment paper.
  4. Pat yourself on the back for making yourself an amazing breakfast on a weekday morning!

REHEAT

  1. Microwave in the parchment paper 1:15 minutes.
  2. Enjoy!
