Peanut Butter Blondies

Peanut butter blondie

Think of the softest peanut butter cookie you’ve ever had… then imagine you can have it without scooping anything, with fewer dishes to do, and rich with extra protein. If that sounds like your thing, these are for you. 


    • 1 cup canola oil (butter works well too, of course…)
    • 2 cups sugar
    • 4 large eggs
    • 2 teaspoons vanilla extract
    • 1 cup all-purpose flour
    • 2/3 cup powdered peanut butter
      I first tried this recipe after I momentarily felt motivated to become a ‘protein powder person’ and bought far too large a container of PB Fit…
    • 1/2 teaspoon baking powder
    • 1 teaspoon salt
    • Optional: add crushed peanuts or chocolate chips

    1. Preheat oven to 350° F. Grease a 9×13 pan.
    2. Mix eggs, oil, sugar, salt and vanilla until well combined. Then mix in the peanut butter powder thoroughly.
    3. Add flour and baking powder, mix until combined. The batter should be thick but stir-able: if it comes out dry, you can add a little milk or oat milk.
    4. Pour batter into the prepared pan. Sprinkle on any toppings you’d like.
    5. Bake for 30-40 minutes, or until the edges begin to pull away from the sides of the pan. To confirm, gently shake the pan: if the middle jiggles, they need more time.
    6. Let cool completely before cutting.
